gluten-free-donut-muffinLast month, market research firm Mintel International released its estimates on the growth of the gluten-free market and projected gluten-free sales will top $8.8 billion in 2014, an increase of 63% over the total from two years ago.  Further, they reported that each of the gluten-free segments experienced significant growth over the two-year period with snacks increasing 163% (including a whopping 456% in gluten-free potato chips), while the bread product and cereal segment jumped a full 43 percent over the same two year period.  Against that backdrop, we shouldn’t have been surprised to learn this week that earlier this month, General Mills, Inc. filed three international patent applications for ready-to-bake gluten-free dough.  The applications include one each for pie, pizza and cookie dough.
