On Wednesday of this week, August 26, new regulations kicked in across the state of Illinois with the implementation of Governor J.B. Pritsker’s new coronavirus dictates. His new policy departs dramatically from the popular protocol employed around the country in that it mandates diners wear face coverings when interacting with servers and/or other restaurant staff – even while seated and eating! Although the new mandates took effect on Wednesday, they were only announced the day before – Tuesday, giving restaurateurs less than 24 hours to plan for and adhere to the policy. And finally, in the state’s largest city, Chicago residents are being asked to brainstorm ideas about how local restaurants can safely off outdoor dining through the winter months. Mayor Lori Lightfoot announced a design contest with a $5,000 prize for the winning solution encompassing a mix of challenging ingredients – frigid temperatures, social distancing, face coverings, good food and drink.
